Summer Shrimp Salad

I definitely like to try something new every once in a while. Last time it was beets, this week it was shrimp. Obviously shrimp isn’t a new phenomenon, but they’re not something I’m familiar with cooking with and always enjoy when I go out to eat. So I decided when browsing the fish section to give it a try. I stared a bags of frozen shrimp navigating words like deveined, before deciding on peeled, deveined, and tails off. Yes that’s right–I don’t want any part of any of that.

As an added bonus that day, I also scored a freshly made pound of cucumber salad with dill, grape tomatoes, and red onion for just 99 cents! Seriously, they were going by slapping 99 cent stickers over the 2.99 sticker. Always the skeptic, I checked the date (it was that day) and examined the container thoroughly before deciding I was just lucky.

So these two events combined to give me one delicious, easier than easy dinner…

So for me, the only action I had to take was to sautee the shrimp and cook the pasta. As the shrimp thawed, I seasoned them with garlic powder, white wine, and lemon juice, cooked them until they turned a nice pinkish color.

Once cooked, I simply tossed everything together and topped mine with feta of course 🙂

    This looks delicious! I didn’t grow up eating seafood, but I’ve been trying to add more of it to my diet. Shrimp is one thing I actually do like 🙂 I’ll need to try this!

    I found a little package of salad shrimp on sale for $1.99 a few weeks ago. Each package had 37 grams of protein (!) and worked great for stir fries and little pasta dishes. I love shrimp, but like you, asked myself why I hadn’t been eating it more often after I ate all those little baby shrimpers!

    Yummm, I love cold shrimp dishes in the summer! Love how light they are but yet you get all of the protein without feeling super full!
