I just can’t stop wishing everyone a happy June! Three main reasons: 1) I’m a teacher, 2) It actually feels like summer, 3) Summer means peak fitness/fun/relaxation for me and my family!
Being able to run our days, active and spontaneous, is invigorating and fulfilling–but also super busy and exhausting! I’m always looking for easy, healthy ways to fuel our fit, busy life.
Lately I’ve been blogging/posting/raving about protein bites because, 1) they are delicious, and 2) they have absolutely saved me from becoming uncontrollably hangry when I’m on the go. Now with the warm weather upon us, I’ve added smoothies to my nutritional repertoire. Smoothies loaded with fruits and/or veggies give the best nutritional boost either as a meal or as recovery post-workout. I’m also extremely picky about the quality of protein powder that goes into my smoothies
Thanks to my affiliation with Sweat Pink I was able to try Bob’s Red Mill Nutritional Boosters. All opinions are my own.
So Bob’s Red Mill came out with a whole line of protein powders–but they are so much more than that. They are actually Nutritional Boosters (which I love) with Chia and Probiotics. They are Gluten Free, Vegan, and of course, contain all clean ingredients.
Not only can I feel great about using these, but I can feel great about letting my kids in on the smoothie action!
Vanilla, Chocolate, Chai, and Protein & Fiber are the flavors they offer and I can’t wait to indulge in them all. It’s great when you want to indulge in a protein powder, isn’t it?
And indulge is exactly what I did this weekend.
The thing is:
1- I like my smoothies really thick and chunky
2- I like to eat them in a bowl with a spoon so I feel like I’m actually eating something
3- And I also need to have some sort of crunchy topping
So basically what I’m talking about it ice cream.
I like my smoothies to be ice cream.
The good news is, it’s entirely possible and easy to do.
The key to a super thick, ice-creamy, dairy free smoothie is the frozen bananas, so I always make sure I have a few baggies in the freezer ready to go. I’ve never been a fan of ice in smoothies since it just seems to water it down, so instead I also always have bags of frozen fruit. Mix the frozen ingredients with just enough almond milk (making this ‘ice cream’ dairy free), and a scoop of Bob’s Red Mill Protein Powder in a blender until you reach the desired consistency. I like to leave some chunks of ingredients to scrape off the side and use as toppings. I also usually add slivered almonds–and maybe even some chocolate chips 😉
For this recipe, I used the Vanilla flavor to compliment the fruit. I was actually able to taste the perfect hint of vanilla in the final product and it added just the light, refreshing flavor I was looking for.
Protein Packed Vanilla Berry {Dairy Free} Ice Cream
Ingredients
1 cup frozen mixed fruit
1 large frozen banana (pre-cut into pieces)
1 scoop Bob’s Red Mill Nutritional Booster (Vanilla Flavor)
1 cup almond milk
Directions
1- Combine all ingredients in blender and mix until desired consistency
2- Top with extra fruit, slivered almonds, chocolate chips

Cracking up when you said you basically want your smoothies to be ice cream. I am the same way! I like them thick and creamy so it feels like a treat plus I’m always trying to pack protein into each meal and snack so this sounds great!
