One of my greatest nemesis is always meal prep. In theory, it sounds fantastic–cook one day, eat healthy all week. But the truth is, every time I try to prep for the week (usually on a Sunday) I can’t get it all done.
So I’ve been a work in progress. Tweaking and bending the ‘rules’ until I can find a meal prep schedule that works for me.
Since I’ve been Paleo I have started a new school year, which presents a whole set of problems challenges. Prepping became just plain overwhelming.
But now (a couple of weeks into the school year), I feel like I’m hitting my stride. Just like in the summer, it is becoming second nature.
Today I wanted to share with you some of my Paleo meal prep favorites that keep me feeling strong all week long! I’m definitely building up a repertoire of dishes with a high ROI (nutritious and delicious without taking too much time!)
Fritatta
Sweet Potatoes
Broccoli Salad
Homemade Mayo
Banana Coconut Cookies!
Some of these I researched and wrote about in my initial plan, so it’s nice to see how a plan can successfully unfold! And now that these are firmly set in my rotation, I can plan my next phase moving forward.

I started didn’t complete for a couple of reasons a whole 30…and I am sold…I had tried paleo before but seriously I can tell sooooo much difference in my bloating, my digestion, my workouts, my mindset….I love these ideas…I need to hear more about this book!!
I always try to meal prep a few things on Sunday but then also find myself doing a lot of it throughout the week too. I definitely haven’t mastered it yet. But I too also enjoy to cook a quick a meal during the week. I like the idea of making a frittata as meal prep!
The frittata has been my lifesaver so many times!

I’ve never thought of roasting sweet potatoes like that. Do you just put some olive oil on top?
I’ve been roasted them face down in a bit of coconut oil in parchment paper, then sprinkle with sea salt when they come out 😍
