I feel compelled today to talk about the inevitable…I am a teacher and another September is staring me down as we speak, and that means my schedule changes drastically.
I’ve been living the Paleo lifestyle for about 4 weeks now, and through trial and error, have found out what really works for my family’s needs and lifestyle. So this post is a true round up of what I will personally be cooking up to get through the busy week.
The Resources
These are sites/recipes that have become a mainstay in my rotation for simplicity and necessity. Basically, I need these in my life and these recipes were integral in my last few weeks. Check out Pinterest—I’m always pinning new ideas!

The Regulars
In addition to those resources, I also do (and will continue to do) the following:
1. Roast a full pan of broccoli
2. Roast a full pan of cauliflower
3. Bake 4 pounds of chicken thighs
4. Bake 4 pounds of chicken breasts
The Helpers
These are some of the items on my weekly shopping list. Some make my life so much more convenient, and some just make everything that much more yummy!
√ Organic, pre-washed, packaged kale/baby spinach mix
√ Pre-spiralized zucchini
√ 2- packages grape tomatoes
√ slivered almonds
√ golden raisins
√ all the avocado!
Notes:
*I was hardboiling a dozen eggs, but with the frittata I don’t think I’ll need them…plus they were a major pain to peel!
*I will also more than likely cook up red meat once a week depending on what I see in my store.
*I don’t prep everything in one day, but instead like to stagger my weekly meal prep over the course of a few days–like Sunday, Monday, Tuesday–then I should be set for the remainder of the week. I hope to give you more on that as I put it into strict practice this September!

I am terrible at meal prep because as soon as it is cooked, I will start trying to eat it! SO that broccoli? WOULD BE GONE
I realize I have to buy pretty much DOUBLE what I think, because between me, my husband, and running it goes fast!

Great tips! I like to wash veggies when I get home from the grocery store and chop them in the morning before I cook them. When I was working out of the home I did a lot more though!
We do a lot of meal planning here but not a lot of advance meal prep. Our weekday meals are pretty simple for that reason. Sundays are the days we get a little more elaborate.
Wait, you can buy pre spiralized zucchini? I don’t have a spiralizer so this would be amazing.

Yes, these are definitely not Paleo exclusive tips. Keeping it simple is best!
Nice post. I think I always need a reminder that even simple things, if it’s not making multiple recipes and full meals helps. Just washing and cutting veggies and having some hard-boiled eggs and snacks to grab & go helps me out a lot!
These are great tips. I’m not really great at meal prepping, but I do like to make a big grain salad or vegetable main dish on sunday so I can have leftovers for lunch during the week.

Now I may could do this 3 day thing. There is no way I have enough time to block out an entire Sunday afternoon to prep. This would give me a good base to start with!
