Broccoli Bowl Super Salad

Lately I’ve been looking for recipes that just work. Recipes that I can make in bulk, taste great all week, fuel my body, and taste delicious. I absolutely love myself some roasted broccoli, so I roast up massive amounts on the weekly as part of my meal prep routine.

This tends to still not be enough. Broccoli is hailed as one of the healthiest Paleo foods (or healthiest foods in general!), so there’s never a reason to feel bad about consuming too much. And with the endless ways to dress up broccoli, I personally rarely get tired of it!

Broccoli Bowl Super Salad

Sure I’ve drenched my broccoli in cashew sauce before, or dipped it in homemade mayo, but this combo is nice and light. Broccoli actually becomes a supporting flavor, rather than the main event. I’ve heard of broccoli salads in the past, but never really explored them until recently. After doing my research (and by research, I of course mean scouring recipes on Pinterest), I found one thing they all had in common–so much flavor.

I cant even really bring myself to call this a salad anymore, since there end up being so many add-ins–it’s definitely more of a bowl. And I love bowls. So there.

This recipe can be a nice little side without the add-ins, but the add-ins make it a scrumptious meal that I could honestly eat everyday. I find the ingredient that really pushes it over the edge are the golden raisins. The sweetness of the raisins combined with the saltiness of the bacon is a match made in heaven.

Broccoli Bowl Super Salad

This bowl is bursting with flavor! At its very basic, it is a cravable side dish that will have guest diving in for seconds. Add in some chicken or hard boiled eggs, and you have yourself a meal.

Ingredients
  1. broccoli 2 pounds
  2. bacon, chopped 1/2 cup
  3. red onion, chopped 1/4 cup
  4. golden raisins 1/4 cup
  5. slivered almonds 1/4 cup
Optional
  1. chicken
  2. hard boiled egg
  3. avocado
Add ingredients to shopping list

Instructions
  1. Roast the broccoli
  2. While the broccoli is roasting, chop the cooked bacon and red onion
  3. Let the broccoli cool
  4. When cool, toss all ingredients in a large bowl
  5. If necessary, drizzle with extra virgin olive oil
Notes
  1. This dish tastes better the next day after the flavors have some time to mingle in the refrigerator
  2. Sealed in the fridge, it lasts great all week
  3. Can be eaten for breakfast, lunch, and dinner

    Yum, this sounds like such a good combo! I love finding recipes I can make in bulk and eat throughout the week. AND I love broccoli and all its health benefits.
