One of the problems I identified with my daily diet was my lack of breakfast in the morning. I’d wake up at 5 (or earlier depending on the littlest one’s mood) have coffee, but not actually eat until I arrived at work around 8. All around not good–and I knew it.
So I set out to make breakfast easy. Something I could easily eat while running back and forth getting everyone ready, grabbing a bite here and there, and then grabbing one to go.
I went back to my old favorite Kodiak Cakes Berry Breakfast Muffins, but tweaked the recipe a bit to make them denser, moister, and overall more store bought tasting–except of course without the junk!
Here’s the recipe I am loving right now. I’ve made a batch two weekends in a row and don’t plan on stopping anytime soon!
Kodiak Cakes Protein Packed Breakfast Muffins
2 cups Kodiak Cakes mix of your choice (I usually use the protein packed one)
1 cup milk of your choice (usually unsweetened almond milk)
1 container greek yogurt of your choice (I’ve used pumpkin flavored, maple, etc.)
1 egg
1/4 cup raisins
1/4 cup mini chocolate chips
Mix all ingredients thoroughly and fill into muffin tin about 3/4 full. I use parchment liners to eliminate any sticking. Bake at 350 for about 12 minutes or until the top is slightly golden.
And as a bonus today, I’m sharing the recipe for a picture I posted on Instagram this past weekend while we were snowed in. I tried my first batch of baked oatmeal squares, and wow. They were gone by the day’s end and this was the only picture I had to remember them by…
Snowed in with no more oats, I’ll have to attempt my next batch this coming weekend, but here’s the basic recipe I used:
Baked Oatmeal Squares
1 cup oats
1 cup almond milk
1 egg
1/4 cup raisins
1/4 cup mini chocolate chips
1 tablespoon cinnamon
Mix all ingredients and pour into an 8 x 8 baking dish. Shake it gently to even out the mixture. Bake at 350 for about 10 minutes or until the top is golden brown.
*Next time I would double this recipe and use a 9×9 dish.
These two recipes are 1) not my own creations, but a compilation of so many recipes I’ve researched for too long before actually trying it, and 2) very similar in ingredients (raisins and chocolate chips), but very different in tastes and textures. They both lend themselves to so many possibilities, and the best is the healthy base and simple ingredients they contain. I love that.

Such a fan of Kodiak Cakes! I use their GF version and when mixed with pumpkin and chocolate chips it’s to die for…then again pretty much anything with pumpkin and chocolate chips is to die for in my book!

Ohhh, I love Kodiak cakes and just picked up a few boxes at Costco! My question…what size container of greek yogurt did you use? A single serving?
Great question…I’ll def go back and edit, but yeah, a regular single serving size. This week I used Chobani’s coffee flavor since it was all I had on hand…they smelt great!
