I am totally on the go. And if I’m not literally on the go, with a 3 year old and 1 year old, I feel like I am. So healthy, portable, kid-friendly breakfasts are a must. I’ve been wanting some sort of muffin lately, so when my bulk order of Kodiak Cakes Flapjack & Waffle Mix came from my Amazon Subscribe and Save last month, I knew exactly what I would do (besides make pancakes every single weekend).
I’ve made pancakes with a number of different natural ingredient combinations–and they’ve come out delicious–but when I found Kodiak Cakes I was hooked. I was actually hooked when I saw the Power Cakes {affiliate link} mix with protein, however this recipe just happen to be made with the Butter Milk and Honey
{affiliate link} mix–I’m sure it would come great with either.


- Kodiak Cakes mix of your choice 2 cups
- Almond Milk 1 cup
- Egg 1
- Coconut Oil 1 tbs
- Agave Nectar 1 tbs
- Blueberries 1 cup
- Combine everything except blueberries into a large mixing bowl.
- Gently fold in the blueberries.
- Fill the muffin tins about 3/4.
- Bake at 350 for about 15-20 minutes until golden on top.
- Remove and let cool.

I totally understand being on the go even when you aren’t actually on the go. My kids keep me busy…and breakfast needs to be quick most mornings. These look delicious- love how simple the recipe is!

I am terrible at making pancakes (they always come out looking so ugly :'( ), so I love the idea of making these into muffins! :] Blueberry muffins are the best! π

Do you use plain unsweetened almond milk or would vanilla unsweetened work?
I always use unsweetened vanilla! The taste works for me!
