‘Kitchen Sink’ Italian Pasta Salad

Do you find yourself in a ‘burger and dog’ rut during the summer?  Make summer barbeques deliciously exciting by indulging in fresh, healthy recipes that will help you feel good, and look good, all season long.

This Italian Pasta Salad has the look and feel of the traditional version minus the globs of mayo.
What makes this recipe so good is the variety of vegetables diced up so that they intermingle with the small elbow pasta.  Each flavorful bite ends up with an amazing texture and crunch that will have you contemplating seconds.  As an added bonus, this colorful Italian Pasta Salad packs a nutritional punch to keep your body energized for all kinds of summer fun.

Here is a sample recipe for ‘Kitchen Sink’ Italian Pasta Salad, but remember, the whole ‘kitchen sink’ idea is to use whatever veggies you desire/are in season/or just happen to have lying around.  So have fun with the recipe and invent your own signature summer dish.

Sample ‘Kitchen Sink’ Italian Pasta Salad

1 box Barilla Plus elbow pasta- cooked al dente according to directions and rinsed with cold water

1 large green zucchini- grilled and diced

2 yellow peppers- grilled and diced

1 container chopped mushrooms- sautéed

1 bunch asparagus- grilled and diced

1 container cherry tomatoes- halved

Garnish with:

Olive oil

Chopped scallions

Fresh mozzarella
