An unfortunate consequence of having two young kids is that I don’t always get to sit down and eat a meal. Often, I find myself forgetting to eat altogether and sometimes even making ‘not so great‘ decisions regarding my fueling goals–gasp!
So I rely heavily on quick, nutritionally dense foods to fuel my active lifestyle. I’m so obsessed with energy bites because they are 1) quick and nutritionally dense, 2) one batch lasts all week (after some gentle reminding to my husband), and 3) they are delicious.
The Bob’s Red Mill Nutritional Booster Protein Powders have become a staple in my busy life. Whether it’s a shaken iced chai (which I’ll definitely share during the Instagram Challenge in July!), protein packed ‘ice cream’, or chocolate protein energy bites, I am fueling my life with clean, natural awesomeness.
And that makes me happy.
I had to share this chocolate energy bite recipe today, but I’m not even sure if 2 ingredients qualified it as a recipe.
It’s that easy…and that delicious.
I grab one of these in the morning while running out the door, mid afternoon when I need a boost, and for a late night sweet (healthy)Â treat.
Ingredients
1 cup chocolate flavored Bob’s Red Mill Nutritional Booster Protein Powder
1 cup softened all natural peanut butter
Directions
Mix until completely combined
Chill in the refrigerator for about an hour
Mold into balls
Keep in the fridge
Did I mention these are vegan, gluten free, dairy free, and full of probiotics, chia seeds, and protein from pea powder? Seriously worth it AND here’s a coupon to get you started.

These are definitely the simplest energy bites I’ve seen!
I am a total chocolate addict and love peanut butter since my time in the US – so this recipe went straight into my notebook. Thanks for sharing.
