Chai Cookie Dough Energy Bites

Hi, I’m Michelle and I’m an energy bite addict.

Since I’ve discovered these little balls of protein packed deliciousness, I’ve been totally obsessed. I keep a bowl in the fridge and any time I’m looking for a jolt on my way out the door, or looking to satisfy a craving, I pop one—and I’m happy.

Since I was introduced to Bob’s Red Mill Protein Powders recently, I’ve come to love their Chai flavor. I’ve had it in a shaker bottle with crushed ice and it could be easily mistaken for a refreshing cocktail. Anyway, it was time for more energy bites in my house and Chai was on deck.

A challenge that I have with energy bites is reducing the amount of nut butter. So I’ve been working on substituting some (or all) of the nut butter for other ingredients that will add to binding everything together, but not overpower the recipe as a whole.

Chai Cookie Dough Energy Bites

I actually used zero nut butters for this recipe and opted for honey, and a ripe banana. I’m happy to say that they did the job perfectly. After combining everything thoroughly, I was left with a batter that was a cookie dough consistency and tasted just like that too.

Ingredients

1 cup Bob’s Red Mill Chai flavored protein powder

1 ripe to over-ripe banana

1/4 cup honey

Directions

1. Mix all ingredients in bowl until they combine to form a thick batter

2. Refrigerate the mixture for about an hour (this helps make the consistency more conducive to forming balls)

3. Form ball about an inch in diameter by rolling the batter in your hands

4. Store in a bowl or container and refrigerate

*I’ve never had them last more than a week!

      Thanks! A few reasons (I guess I could’ve talked about that!)…we are going to be starting Paleo soon so I’m phasing out peanut butter and haven’t bought any almond butter yet. Another reason though is I’ve been having trouble getting the just right amount without it overpowering all the ingredients and being too sticky.
