So I finally did it. Despite the still sweltering 80 degree September days here in New York, football season has begun and I couldn’t help but crack open my first can of pumpkin. It’ll be fall soon enough–maybe I can will it with this recipe. I also indulged in pumpkin froyo, and pumpkin spice coffee and craft beer are suddenly not too far off the horizon.
Clearly Mother Nature, it’s time.
So the timing was perfect to team up with Silk and their #MeatlessMondayNight campaign to bring you a healthy {fall} recipe to add to your repertoire. Silk’s website has great information on plant based diets, and reason why you might want to try and #SidelineMeat!
I knew I wanted to make a warm, savory recipe in anticipation of the brisk fall day that should be arriving any second now. I started with the idea of a dip, then possibly a soup, then somehow arrived at these Baked Macaroni Pumpkin Cups.
They were inspired by countless backed macaroni and cheese cups I’ve seen around Pinterest, but I decided to keep these simple and let the pumpkin flavor shine.
Aren’t they cute? They also totally held together nicely…no fork necessary! Great for a game day (or #MeatlessMondayNight!) appetizer.
Ingredients:
1 pound whole wheat small shell pasta
1 can pumpkin puree
1 1/2 cups Silk Unsweetened Vanilla Almond Milk
1 tbs pumpkin pie spice
Cook pasta according to directions on the box. I used small whole wheat shells, but any small shaped pasta would be just fine. In a separate pot (or when the pasta is finished) add the pumpkin puree and Almond Milk. Again, I used Silk Unsweetened Vanilla Almond Milk, but any variety would work just fine. I just always have this one in my fridge and it seems to work well with everything. Combine the pumpkin and almond milk over low heat and then add in pumpkin pie spice.
Once the sauce is well combined, mix together gently with the pasta making sure it is evenly coated. Spoon pasta into lined muffin tin. I made sure to pack it tightly to encourage binding. Apparently pumpkin is a binder, so no egg was necessary in the recipe!
The result was a crispy outer and a moist inside–a hit with kids and adults!
