Did I ever mention my absolute love for chocolate and peanut butter? Well, if not–there ya go. I know I’m not alone, but let’s all face it together–summer/racing season is right around the corner, and Reese’s Peanut Butter Cups are just not a great way to fuel the #fitmom life. So in an attempt to satisfy my night-time cravings in a healthy way, I whipped up a yummy alternative.
I’ve baked with Kodiak Cakes mixes before (usually muffins), but when I saw them advertising their new Dark Chocolate mix, I knew it just called for something different. The energy/protein bites I’ve made in the past have been more oat based, and although yummy, I’ve longed for a bite less oaty and more doughy.
These are so on point.
Did I mention they are just 3 easy ingredients and no bake?
Kodiak Cakes Dark Chocolate Protein Bites
Ingredients
Kodiak Cakes Dark Chocolate Mix
Oats
Peanut Butter
Optional Add-Ins
More mini chocolate chips (I was pleasantly surprised to find chocolate chips already in the mix, but a little more never hurt!)
Dried tart cherries (I got them after the fact, but they are totally going in the next batch)
*The only advice I have for add-ins is to keep them finely chopped so as to not disrupt the doughy, chocolaty goodness of the bites.
Mix well, chill in the fridge (about an hour), then roll into bite size balls. I then put them on wax paper to set a bit more in the fridge, before transferring them to a bowl.
*Warning: Leaving them in an open bowl in the fridge may result in spontaneous disappearance if you have husbands or children perusing for snacks.*
These will not last long!

Michelle, is Kodiak Cakes gluten free? I think it is but I’m not positive. I want to make these! Dark chocolate love.
I believe they do make a gluten free mix, but I’m not sure if the dark chocolate is…they are super delish though!
